Okay, this may seem a little stupid, because I already know you can get
sued if you don't add the disclaimer at the beginning. For one, I always
put in an "I don't own such-and-such" when I write fan fiction, but I
have to wonder, do the owners of the books, movies, anime, etc. really
check it or something?

No, but if anyone aware of the real owner sees your fanfic/fanart/whatever and you do not have any disclaimer posted, they can contact the original artist and you can possibly get sued.

But that always never happens and most of the disclaimers are posted only for other people not to get sassed up and say "you don't own that, you liar!"
at least that's why I do it :[
